BAKED STUFFED ZUCCHINI 
1 large zucchini (I've also used 3 small)
1 lb. ground beef / hamburger
1 chopped green pepper
1 chopped onion
pulp of zucchini that was scooped from shell, chopped
1 can tomato paste (not sauce, paste holds mixture together)
salt and pepper, to taste
oregano (optional)

Slice zucchini in half length-ways. Scoop out pulp leaving a shell. Parboil shell in water 8 to 10 minutes, then drain.

Brown hamburger, peppers, onion and cut up zucchini pulp. (If there's liquid, drain.) Add tomato paste. Fill shells with mixture.

Place on foil covered cookie sheet and bake at 350°F about 45 minutes. If you like, sprinkle with grated cheese when you remove it from oven.

Par boiling the zucchini shell even for 5 minutes makes it so soft that you essentially have a flat piece of squash instead of a nice shell. There is nothing wrong with that but if you don't par boil you will have a nice "boat" in which to put the meat mix that will cook nicely in the oven. Otherwise a great simple recipe that makes use of those big zucchinis that I used to put in the compost pile.
