BLUEBERRY BANANA BRAN MUFFINS 
1 1/3 c. mashed bananas
4 egg whites
1 c. non-fat milk
2 tbsp. safflower oil
3 1/2 c. whole wheat pastry flour
1/2 c. oatmeal
1/2 c. bran
2 tsp. baking soda
2 tsp. baking powder
2 c. blueberries
1/4 c. water
1/4 c. white grape juice

Beat together mashed bananas and egg whites until creamy. Add milk and oil, beat well. Measure in flour, soda and baking powder, oatmeal and bran. Beat well. Gently mix in blueberries. Spoon batter into muffin tins sprayed with Pam. Bake at 350 degrees for 15 minutes or until lightly browned. Makes about 24 muffins.
