HEALTHY BLUEBERRY WALNUT BRAN
MUFFINS
 
1 cup egg substitute (or real eggs)
1 cup buttermilk
8 oz unsweetened applesauce
3 tbsp. honey
1 1/2 cups bran cereal
1 1/2 cups oatmeal
2 cups unbleached all purpose flour
3 1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 tbsp. cocoa powder
4 tbsp. vegetable oil
2 cups frozen wild blueberries
1 cup walnuts
canola spray (for muffin pan)

Combine the following in a large bowl: egg, buttermilk, bran, oatmeal, applesauce and honey. Allow to sit for 15 minutes, then beat.

Combine the following in a medium bowl: flour, baking powder, baking soda, salt, cinnamon, cocoa powder and oil.

Mix the dry ingredient mixture into the large bowl. Beat with hand mixer until smooth. Stir in blueberries and walnuts.

Spray muffin pan with canola spray and fill with batter.

Bake at 400°F for 20-25 minutes.

Yields approximately 18 medium sized muffins.

I enjoyed these. I made them with 4 tablespoons of honey. They came out well.
