ARTICHOKE QUICHE 
2 tbsp. butter
1 medium onion, chopped
1 clove garlic, minced
2 tbsp. chopped fresh parsley
1/2 c. sour cream
4 eggs
1/2 c. half & half
2 c. shredded Swiss cheese
1 c. cooked, chopped artichoke
1 tsp. salt
1/8 tsp. pepper
1/4 c. chopped ham (optional)
1 (9 inch) unbaked pie shell

Melt the butter and saute the onion and garlic until tender. Combine the parsley, sour cream, eggs, and half & half; mix until well blended. Add the shredded Swiss cheese, artichoke, salt, and pepper to taste. Chopped ham may also be added. Mix thoroughly and pour into pie shell. Bake in preheated 425 degree oven for 15 minutes. Reduce the temperature to 350 degrees and cook for about 25 minutes until set. Cool for about 25 minutes before serving.
