Homemade Spaghetti Pasta Sauce

 Lynne (Arizona) says:
This is an outstanding recipe! I usually just buy Prego but thought it would be fun to make from scratch. Will never buy Prego again. The only thing I did different is I could not find fresh basil so I used dried. Next time I will use everything fresh. The flavor was amazing. My husband was very happy. This makes a huge pot so I froze 2 separate portions to use at a later date. Can't wait!!!

You need to add a tablespoon of sugar to this recipe and omit the paste...you never add onion or onion powder to anything Sicilian.. and yes, fresh spices are the best. I would add a couple bay leaves too! My sauce is probably the best homemade sauce around Michigan. Not to brag but have made it for people that cater for a living and they use my recipe in their business!

Agree with the Teaspoon (only) of sugar. Did not see Sicilian mentioned in the recipe. Onions rock.

I would choose this recipe because there isn't any sugar. I really don't like a hint of sweet in spaghetti sauce.

I used fresh parsley and basil. Couldn't find tomato puree so used tomato sauce. Added 1/2 tsp. sugar to cut a bit of acid. Delicious! Served a crowd of 12 (added meatballs) plus a meal for 2.

This was a good recipe, instead of tomato puree I used canned stewed tomatoes, fresh diced romas, an extra can of tomato paste and veal stock, turned out perfect

I didn't read the ingredients very well before heading to the store so I didn't notice it said fresh parsley and basil. I have some dried at home and already mixed everything together. I guess we will see in 6 hours how it is but will for sure use fresh next time. I will update my post after I try it, I hope it is good!

This recipe sounds about perfect, except add a little more garlic and 1/2 cup sugar to cut down on the bitterness of the tomatoes. I would also like to suggest can whole tomatoes instead and crush with potato smasher

 PJ (New York) replies:
If your sauce is bitter it is because of the tomatoes chosen. There will be no way to know until your sauce in underway.

Never ever use sugar. It may ruin your sauce by making it too sweet. Please never put half a cup of sugar in your sauce this WILL ruin the sauce and put people into diabetic shock. Instead stir in a tablespoon of butter for every 2 quarts of sauce. This will take away the bitter without making you sauce sweet and or ruined. Add your favorite meat.

PJ that's ridiculous, its not new to add sugar to mask acidity.

This is fantastic!! I was leery of trying something new, but this was excellent. I used bravo sauce with the above spices and Merlot wine and brown sugar. Yum!!

Simply delicious! I used stewed tomatoes and mashed them because I couldn't find crushed, also I added a can of chicken stock (my moms idea) - came out excellent!!! DYNAMITE Recipe. I will be making again ;)

This is really good. I doubled the recipe, added merlot wine with the paste and about a cup of sugar. Of course, I adjusted the seasonings for my family's tastes, but everything else was perfect. I also used an immersion blender to puree everything together as I have a child that doesn't eat "chunky".

I used a cup of cabernet after sweating the onions. Also added a half cup of sugar with the seasonings. I added 2 bay leaves and let simmer about 3 hours before I added cooked crumbled ground beef. After the total 6 hours, the whole house smelled fantastic and this recipe is a keeper! No more Prego for us!

This sounds like a beautiful recipe, I will be trying it out today.. what I want to know is.. could you do the 6 hour cooking process in a slow cooker? I just don't want to leave my stove on that long!

 Cooks.com replies:
Hi Claire,

This is a good candidate for preparing in a slow cooker!

Well I thought that it was a really long time to cook so I just mixed it all in the blender and cooked it until it was ready. And that turned out to work. It saves time. I added a little bit of water because it was a little too thick. It really works. Thanks

Must include celery and green pepper. Saute with onion. Craig Claiborne called this the Holy Trinity of Southern cooking. This was my late Dad's secret to perfect spaghetti sauce. Magical. Just pure magic.

 Erika (Michigan) says:
This one is outstanding! I added red and green bell peppers, but I didn't add the celery and chicken broth that I wanted to. Other people here reported good results with those additions so I'll try them next time. Thank you, Stephanie!
