“CHICKEN PARMESAN” IS IN:
NEXT RECIPE:  CHICKEN QUESADILLAS

CHICKEN PARMESAN 
4 to 6 chicken breasts
Italian dressing for marinating chicken
2 cups bread crumbs
1/2 cup Parmesan cheese
garlic powder
salt and pepper
mozzarella cheese
spaghetti sauce
oil with 3 tbsp. butter

Marinate chicken breasts for 1/2 hour in Italian dressing add Parmesan to bread crumbs and garlic powder, salt and pepper to taste. Dip marinated chicken into bread crumb mixture and add enough oil with butter in pan for frying until brown on both sides.

Preheat oven to 375°F.

After browning, place chicken in shallow baking pan and pour any kind of spaghetti sauce of your liking over chicken. Add enough mozzarella cheese to cover and bake at 350 for 45 minutes.

If you have sauce left over cook linguini noodles, drain add sauce add 3/4 cup mozzarella and Parmesan for a side dish.

I'm making this tonight. Sounds great, but curious as to why "pre-heat to 375" then "bake at 350 for 45 minutes?" I'll go with the lower in case 375 is a typo.

Hi Kathy,

It might be because the oven temperature drops somewhat when you open the door to add the chicken. It also helps to sear it at first and seal in the juices at a higher temperature; and cook it at the lower temperature. I do this often. Of course, it could just be a typo :)

Excellent recipe. Resist the temptation to put too much mozzarella cheese on top before putting in the oven or it will brown too fast and create this big brown cheese glob on top - I will be less generous with cheese next time I bake this and that will be soon because it is easy and absolutely yummy.
