GREEK YOGURT-CUCUMBER SAUCE 
1 med. cucumber, peeled, seeded and finely chopped
1/2 tsp. salt
8 oz. plain (non-fat) yogurt
1 clove crushed garlic
1 tbsp. chopped chives or scallion

Finely chop cucumber into strainer, sprinkle with salt and let stand 15 minutes. Press out liquid with back of spoon and drain. Place in bowl with rest of ingredients and mix well. Refrigerate until ready to serve.

Excellent on lamb patties, also very good with stuffed grape leaves. Makes 1 cup.

This is not a Greek recipe. This is what greeks call "Tzatziki", a word derived from "Cacik" which is Turkish rooted word. As always greeks, represent Turkish food as if they are greek. "Yogurt" is also turkish very few know that yogurt was introduced to world by Turks. Yog is the root of the word which means condense and is related to yogun "intense," yogush "liquify" (of water vapor), yogur "knead."
This so called greek yogurt sauce is totally turkish and all the etmyological evidence is out there and should be respected as it is especially by cooks.com which is pioneer in the field of food recipes.
