SUGAR COOKIES & ICING FOR
COOKIES
 
1/2 cup (1 stick) butter
1 cup sugar
1 egg
1 tbsp. milk
1/2 tsp. vanilla
2 cups all-purpose flour
1 tsp. baking powder

Cream butter, sugar and vanilla all together. Add egg. Beat until light and fluffy. Stir in milk. Stir in sifted dry ingredients. Blend well. Divide dough in half. Chill 1 hour or more.

Roll dough on floured board to about 1/8-inch thickness. Cut with a floured cookie cutter.

Bake on cookie sheet, in a 375°F oven, for 8 minutes. Cool. Store in tightly covered container.

Makes 4 dozen cookies. Frost with icing.

ICING FOR COOKIES:

3 cup sifted confectioners' sugar
1/4 cup milk
1/2 tsp. vanilla
Dash of salt

Combine sugar, milk, vanilla and salt; mix well. Add food coloring. Frost cookies. Add candy sprinkles if desired. Will frost approximately 5 dozen cookies.

I made these cookies for the holidays and my husband took them to work. EVERYONE LOVED THEM! They were very easy to make and they tasted fantastic. I separated the frosting and colored each portion. I then scooped the colored frosting into ziploc baggies and cut the tip off for easy decorating. My husband was impressed! LOL I will be making these again!

What did I do wrong? I tried this, and it was WAY too dry. I had to add a lot more milk to get to the consistency to use as icing to put on cookies. Can you really use 3 cups of confectionary sugar (a dry ingredient) and add just 1/2cup milk and 1/2 tsp. of vanilla (wet ingredients)? When I did that, I basically had a bowl of sugar to work with (not even near the consistency for icing). Did all of you follow that receipe exactly because I know it didn't work for me.

I made the cookies and baked the second batch for only 6 minutes as my oven must be quite hot. I mixed up the icing but find the consistency very water and wonder if it will hard once applied or simply ruin the cookies. Has anyone else had a problem with this?

Adjust the temperature/time you're baking at to suit your oven, since all ovens bake differently.

Regarding the icing, as you can see from reading the comments above, some people think the icing is too dry, while others find that it's too wet. This can be due to a number of reasons, such as storage conditions, humidity in the environment and measuring differences.

Because of these variations (even using the same recipe) it's best to mix the recipe according to the consistency you are looking for.

You really don't need a recipe for confectioners icing - what matters is the consistency. To get the right consistency, start with any amount of confectioners sugar, then add flavoring (usually vanilla, almond or lemon), and slowly add milk or water, drop by drop stirring until smooth and thick.

Add a little more sugar or less water/milk if the icing is too thin, or a bit more sugar or liquid if the icing is too thick. Adjust the icing until it is a good consistency for pouring; it will air-dry on the cookies after sitting if you use the right consistency.

This is an excellent and easy recipe. I have made these cookies two times in the last week. One time with the icing, which is also excellent, this last time without the icing. Would you believe, I will will make, yet another batch tomorrow. When you want a little something sweet following lunch or dinner - this hits the spot. I want to make two more batches, one with lemon extract and one with coconut, just to see how they turn out....

I have a feeling this will be a weekly treat, its already heading that way. Not only easy, but inexpensive.

This recipe for cookies and frosting are so awesome! I've never made the perfect cookie and frosting before. It's so basic and inexpensive. Better than store bought cookies. The cookies have hardened a little since I made them but still delicious. I am very impressed with how simple it is. Especially the amount of time to bake. I plan to make a batch for my daughters first birthday party. Elmo theme!! I can't wait to hear all the reactions to them :)
