THE EASIEST PINEAPPLE UPSIDE
DOWN CAKE
 
1/2 cup (1 stick) butter
1 cup light brown sugar
4 pineapple slices
4 maraschino cherries
1 (9 oz.) pkg. golden yellow (or white) Jiffy cake mix
1/2 cup water
1 egg

Preheat oven to 350°F.

Melt butter in a 10-inch medium deep cast iron or oven-safe frying pan over medium heat. Add brown sugar and stir till it melts and get bubbly. Work pineapple slices down into melted sugar; place cherry pieces into the center of the pineapple slices.

Prepare one yellow (or white) Jiffy cake mix with 1/2 cup water and 1 egg. Mix well with a fork to work lumps out. Beat well for one minute. Pour over warm butter sugar mixture.

Bake at 350°F for 25 minutes or until toothpick inserted into the middle of cake comes out clean. Don't over-bake as the cake will become dry.

Cool for 10 minutes and then invert onto a serving plate. Serves 4 hardy slices.

This recipe can easily be doubled for a larger frying pan.

I just made this and it is so good! I love how simple the ingredients are to gather, which makes this perfect for when you need a quick dessert or snack. The pineapple slices add a nice sweetness to it and the maraschino cherries give it an extra pop of flavor. It's definitely one of my new favorite go-to recipes!
