APPLE-GLAZED PORK ROAST 
1 (2 lb.) rolled boneless pork loin roast
Vegetable cooking spray
1/4 c. apple jelly, melted
2 tbsp. Dijon mustard
1/2 tsp. garlic powder

Trim fat from roast and place roast on a rack coated with vegetable cooking spray. Then place rack in a shallow roasting pan.

Combine jelly, mustard and garlic powder; brush over roast. Bake at 325 degrees for 1 hour and 55 minutes or until meat thermometer registers 160 degrees, basting frequently with jelly mixture. Let stand 10 minutes before slicing. Yield: 8 servings (about 236 calories per 3 ounce serving).

This recipe is easy & really good! I just changed the 1/4 cup jelly to 1/2 cup to make it a lil sweeter.
