APPLE GLAZED PORK ROAST 
1 (2 lb.) pork loin roast, rolled, boneless
Vegetable cooking spray
1/4 c. apple jelly, melted
2 tbsp. Dijon mustard
1/2 tsp. garlic powder

Trim fat from roast and place roast on a rack coated with vegetable cooking spray. Then place rack in a shallow roasting pan. Combine jelly, mustard and garlic powder. Brush over roast. Insert meat thermometer into thickest portion of meat. Bake at 325 degrees for 1 hour and 55 minutes, or until meat thermometer registers 160 degrees, basting frequently with jelly mixture. Let stand for 10 minutes before slicing.
