“POWDERED SUGAR COOKIES” IS IN:
NEXT RECIPE:  PRESSED COOKIES

POWDERED SUGAR COOKIES 
1 cup (2 sticks) butter, softened
1 cup confectioners' sugar
1 egg
1 tsp. vanilla or other flavoring
2 cups all-purpose flour
1/2 tsp. baking soda

Preheat oven to 350°F.

Cream butter until light and fluffy, stirring in sugar gradually. Add egg and vanilla or other flavoring.

Combine flour and baking soda until well mixed. Stir into creamed mixture.

Shape into 1-inch balls and arrange 2-inches apart on a lightly greased cookie sheet. Press each ball down with the tines of a fork.

Bake at 350°F for about 6 minutes. Cool on wire racks.

Makes about 5 dozen.

These cookies came out great. Only had 4 oz. of butter, so I added a little oil.. only made 2 dozen. Topped cookies with icing made with powdered sugar and a tiny bit of water. YUMMY!

Hi Jean,

Sometimes if your vanilla has been on the shelf for awhile, you can add a little more of the vanilla. Or try storing a vanilla bean or citrus peels in your sugar. I sometimes add other flavorings such as orange oil, coconut extract, almond oil, etc. And some liqueurs are great when you want to kick up the flavor in cookies - most of the alcohol bakes off.

I use 1/2 tsp. almond extract and 1/2 tsp. vanilla instead of just 1 tsp. vanilla, to add more flavor. They are fabulous!!!

Very good! But how I changed the recipe was by I put 1 cup of white sugar instead of confectioners' sugar, and I put the confectioners' sugar on the outside of the dough... It was great!!

My mother's favorite cookie recipe was very similar to this, but I believe it had some cream of tartar. She called it her tender sugar cookie recipe, as opposed to the to the tougher cookie she made and frosted. If you substitute granulated sugar for the powdered sugar it turns into one of those tougher cookies.

Pretty good sugar cookies, but are they supposed to crumble a lot? My 19 month old son loves them, but it ends up needing more cleaning afterwards...not a big deal, but would be nice. Besides that, my husband and I love them!

I used granulated sugar and crisco instead just because thats what I had on hand and they turned out perfect! So light and crispy! I also used a sugar coated fork to press the dough down!
