BARBECUED CHICKEN WITH MASHED
POTATOES AND GRAVY
 
This recipe was frequently made by my mother in law, is delicious and inexpensive to make. Being from the South, this was served with cornbread, green beans and coleslaw.

1 (3 to 5 lb.) whole chicken, cut into pieces and salted each side

SAUCE:

2 tbsp. flour (to thicken)
1 cup vinegar
1 cup barbecue sauce (your favorite)
1 cup ketchup (Hunts)
1/2 cup (1 stick) butter, melted

Mix flour into vinegar until smooth. Set aside.

Pour barbecue sauce, vinegar/flour mixture, ketchup and butter into saucepan and boil/cook until mixture thickens.
When thickened pour over salted chicken arranged in casserole dish.

Bake in preheated 350°F oven for about 1 hour. Chicken should be slightly browned with clear juices.

The sauce should be poured over prepared mashed potatoes.
