BARBECUED CHICKEN WITH MASHED POTATOES AND GRAVY | |
This recipe was frequently made by my mother in law, is delicious and inexpensive to make. Being from the South, this was served with cornbread, green beans and coleslaw. 1 (3 to 5 lb.) whole chicken, cut into pieces and salted each side SAUCE: 2 tbsp. flour (to thicken) 1 cup vinegar 1 cup barbecue sauce (your favorite) 1 cup ketchup (Hunts) 1/2 cup (1 stick) butter, melted Mix flour into vinegar until smooth. Set aside. Pour barbecue sauce, vinegar/flour mixture, ketchup and butter into saucepan and boil/cook until mixture thickens. Bake in preheated 350°F oven for about 1 hour. Chicken should be slightly browned with clear juices. The sauce should be poured over prepared mashed potatoes. Enjoy! Submitted by: Marilyn Todd |
