BAVARIAN CHICKEN 
2 whole chickens, each cut in half
4 c. mashed potatoes
2 lb. sauerkraut, washed
2 c. water
salt and pepper, to taste
2 slices bacon

Spread mashed potatoes evenly in the bottom of a 9x13x2-inch pan. Spread kraut, which has been washed several times, over potatoes. Arrange chicken over kraut, cut side down, and brush with oil or melted butter. Salt and pepper to taste. Pour water over kraut. Place 1/2 piece bacon on each piece of chicken. Bake, uncovered, at 350°F for 2 hours.

Serves 4.
