ERIKA'S FUDGY NO-BAKE COOKIES 
1/2 cup milk
1/4 cup (1/2 stick) butter
1/4 cup unsweetened cocoa powder
1 cup sugar
1 cup peanut butter (I use 1/2 crunchy, 1/2 regular)
1 tsp. vanilla
2 cups quick-cooking oats
1/4 cups chopped peanuts (optional)

Add milk, butter, cocoa powder, and sugar to a medium pot.

Bring to a boil over high heat for 1 minute, then turn down to medium.

Add all other ingredients, and remove from heat when peanut butter is melted.

Drop by spoonfuls onto tin foil, and place in the freezer until firm.

Tip: In the winter, place tin foil on the snow. There is much more room outside than in a freezer!
