HOMEMADE CHOCOLATE PUDDING 
1/2 c. cocoa
1 c. sugar
1/2 c. powdered milk
1/2 tsp. salt
4 c. water
4 tbsp. cornstarch
1/2 tsp. vanilla
3 tbsp. butter

Mix first 6 ingredients together. Cook in microwave stirring every once in a while until thick. When done, add vanilla and butter.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I made this as a gluten-free chocolate pie. Instead of cornstarch I used tapioca starch and 2 cups of water instead of four. Worked great!!!

I just made this. I substituted tapioca starch as well since I came across it first in the pantry. Also, I used 4 cups milk instead of water. I think I will leave out the salt next time since the butter I have contains salt. It turned out very rich and creamy this way. I mixed all the dry ingredients first, then added the milk. Whisked on the stove until a good simmer for a couple of minutes, then it thickend nicely. Has a rich, chocolate flavor. Does not need any additional cocoa powder added. Very good! Even my 6 year old picky child likes it :)
