This vinaigrette has a bright and flavorful profile thanks to the combination of extra-virgin olive oil, white balsamic vinegar, shallots, and fresh oregano. It's perfect for dressing up salads, but can also be used as a marinade for grilling meats or vegetables. The best part is that it only takes a few minutes to make, so it's a quick and easy way to add a burst of flavor to any dish. 1/3 cup extra-virgin olive oil 4 tablespoons Sherry wine vinegar 1 tablespoon minced shallots, chives or green onions 4 cloves garlic, crushed 1 tablespoon minced fresh oregano 1 tablespoon minced fresh basil 1/2 teaspoon salt 1/4 teaspoon black pepper In a small bowl, whisk together the olive oil, vinegar, shallots or chives, garlic, salt, oregano and basil until well combined. Season with salt and pepper to taste. Pour the vinaigrette over salad greens or other desired ingredients and toss to coat. Tip: This can be made in a blender or food processor. For variations, the vinegar can be changed. white or red balsamic vinegar or red wine vinegar are some options.
