1 EGG CAKE 
1/2 cup butter, slightly softened
1 cup sugar
1 egg, beaten until light
1 cup milk
2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt (optional)
1 1/2 teaspoons vanilla or other flavoring

This is a simple cake that can be the base of many last minute desserts. Frost with a favorite frosting, top with fresh or canned fruits in syrup and a dusting of confectioners' sugar or serve with ice cream or sliced with a sandwich of pudding or custard. Almond, lemon, orange or other flavorings may be substituted for the vanilla and grated citrus peel or ginger can be added as variations.

Preheat oven to 350°F.

Whisk together flour, baking powder and salt. Measure the milk and stir in the vanilla.

Cream together butter and sugar. Add egg and beat for 2 minutes or until light.

Stir in 1 cup of the flour mixture, the milk mixture, then the remaining flour mixture. Beat for 30 seconds, or only until combined. (For a tender cake, do not overbeat the batter once the flour has been added).

Bake in a buttered 9 inch square pan for 30 minutes or until a toothpick inserted in center of cake comes out clean.

Hi Willer,

The recipe calls for plain flour rather than self-rising flour. You can try it with self-rising flour, but omit the salt and baking powder if you do.

I've just made it! I substituted sugar for brown sugar and added 1/2 teaspoon of cinnamon :) It's a great recipe. I love it! I was looking for something real quick and available for me at night with only the basic ingredients in the fridge and I found this one! :) Greetings and thank you's from across the ocean - your cake made it to Poland ;-)

I just made this into a jello pudding cake. I substituted pineapple rum for the vanilla, and when it was done poked holes all over the top and made a strawberry jello with 1 cup hot and 1/2 cup cold water, let it cool in fridge but not set. Then pour on the cake. Cool and make a pudding and spread on top, and cover with whipped cream! Yummy! I know it sounds weird, but it's good!

I substituted soy milk used raw brown sugar, 1 ripe banana and half a red delicious apple peeled, used coconut oil instead of butter and folded in 1/2 cup chopped cashews and 1 cup Craisins dried cranberries. This is a great basic recipe if you keep these basic ingredients in the house!

I made this cake last night, as a last minute dessert to make without going to the store (everything listed was a kitchen staple). It's a bit dense and a very bland favor, which could be good or bad, depending on your needs.

On the up side, it's very easy to flavor it without it being overpowered by the cake itself (we chose a lemon glaze). However, for those who are short handed, this cake isn't exactly the most flavorful. For those who can't flavor it, I would maybe suggest a little more sugar to make it sweeter.

I have made this cake for years. I change up the flavorings, from Vanilla, lemon, butter rum, etc. I made it today for the first time in years. Couldn't find my written recipe so I googled it and there it was! I got my old copy when I was in Home Ec. In high school 1972! Today I made it with Vanilla and rum (couldn't find butter rum). Sprinkled powder sugar on it. Turned out great! Made this for my 2 sons and now my 3 grandsons. "Grandma, how come you didn't make this before?" I did, they just don't remember. Thanks for being there!

Cake is very dense and bland. Pineapple might be a good flavour for it. I made chocolate icing and it is ok but If I make it again might use brown sugar and a bit more than called for.
