AUTHENTIC STYLE TORTILLAS 
Here's a recipe for authentic tortillas using original ingredients (lard) for that traditional flavor. This is an old recipe from my great aunt's recipe box. My mother made these, too, but she never wrote the recipe down.

2 cups all-purpose flour
1 teaspoon salt
1/4 cup leaf lard
1/2 to 3/4 cup warm water

In a large mixing bowl, combine the all-purpose flour and salt. Add the lard to the flour mixture and use your hands or a pastry cutter to incorporate it until the mixture resembles coarse crumbs.

Slowly pour in warm water, starting with 1/2 cup, and mix the dough with your hands until it starts to come together. Add more water as needed until the dough forms a smooth and soft ball.

Transfer the dough onto a lightly floured surface and knead it for about 3 to 5 minutes until it becomes elastic and smooth.

Divide the dough into small golf ball-sized portions. You should be able to make approximately 8-10 tortillas with this amount.

Roll each portion of dough into a round ball and flatten it slightly with the palm. Using a rolling pin, roll out each ball into a thin, circular tortilla. Aim for a diameter of about 6 to 8 inches.

Heat a cast-iron skillet, griddle, or a non-stick pan over medium-high heat. Place one tortilla at a time onto the hot skillet and cook for about 30 seconds to 1 minute on each side until it starts to bubble and develop golden brown spots.

Remove the tortilla from the skillet and place it on a clean kitchen towel or a tortilla warmer to keep it warm and pliable. Repeat the process with the remaining dough balls, rolling and cooking each tortilla individually.

Serve the warm tortillas immediately or keep them covered with a cloth to maintain their heat and flexibility.
