BLACK BOTTOM CUPCAKES 
Filling:

8 oz. cream cheese
1 egg
1/2 c. sugar
1/8 tsp. salt
1 c. chocolate chips

Cake Batter:

1 1/2 c. all-purpose flour
1/4 c. unsweetened cocoa
1/2 c. vegetable oil
1 c. sugar
1 tsp. baking soda
1 tbsp. vinegar
1 c. water
1 tsp. vanilla

In a large bowl, combine cream cheese, egg, 1/2 c. sugar and 1/8 tsp. salt; beat well. Add 1 cup chocolate chips.

Prepare cake batter (alternatively, a store-bought Devil's Food cake mix may be substituted for the recipe for cake batter given here).

To prepare cake batter, stir cocoa into 1 cup sugar until blended. Add flour, baking soda and mix. Stir together oil, vinegar, water and vanilla; add to dry mixture and beat until combined.

Fill paper muffin cups 2/3 full with cake batter. Add a generous teaspoon of the cream cheese mixture to each cup.

Bake in a preheated 350F oven for about 30 minutes or until done.

Servings: 24
