SUNDAY COFFEE CAKE | |
Batter: 1 1/2 cups sifted all purpose flour 2 1/2 teaspoons baking powder 1/2 tsp. salt 1 egg 3/4 cup sugar 1/3 cup butter, melted 1/2 cup milk 1 tsp. vanilla Preheat oven to 375°F. Combine all dry ingredients, mixing until crumbly and set aside. Beat eggs until frothy; beat in sugar and butter. Beat until well blended. Stir together milk and vanilla and add to mixture slowly, in a thin stream, until incorporated. Using a wooden spoon, stir in flour until well combined (about 30 seconds). Once the flour is added, do not overmix or the coffee cake will be tough and dry rather than tender. Pour batter into a well greased and floured 8-inch square or a 9-inch round layer cake pan. Sprinkle topping over the top evenly. Topping: 1/2 cup sugar 1/4 cup sifted all-purpose flour 1/4 cup butter, softened 1 tsp. cinnamon Bake until a toothpick inserted in center of cake comes out clean; remove from oven as soon as center has set (about 25-30 minutes).
