“SUNDAY COFFEE CAKE” IS IN:

SUNDAY COFFEE CAKE 
Batter:

1 1/2 cups sifted all purpose flour
2 1/2 teaspoons baking powder
1/2 tsp. salt
1 egg
3/4 cup sugar
1/3 cup butter, melted
1/2 cup milk
1 tsp. vanilla

Preheat oven to 375°F.

Combine all dry ingredients, mixing until crumbly and set aside.

Beat eggs until frothy; beat in sugar and butter. Beat until well blended. Stir together milk and vanilla and add to mixture slowly, in a thin stream, until incorporated.

Using a wooden spoon, stir in flour until well combined (about 30 seconds). Once the flour is added, do not overmix or the coffee cake will be tough and dry rather than tender.

Pour batter into a well greased and floured 8-inch square or a 9-inch round layer cake pan. Sprinkle topping over the top evenly.

Topping:

1/2 cup sugar
1/4 cup sifted all-purpose flour
1/4 cup butter, softened
1 tsp. cinnamon

Bake until a toothpick inserted in center of cake comes out clean; remove from oven as soon as center has set (about 25-30 minutes).

I have been searching for this exact recipe for several years. I used to make this coffee every Sunday morning. I got the recipe originally from a recipe club which was lost in a move years ago. This recipe can be doubled and the cake comes out perfect. Thanks so much for this recipe

This recipe is great! I made it on Sunday morning, and it only took about 1 hour to get from the counter to the table! Great flavour, and I added some oats to the topping. I'll definitely be making this cake again!

This is the recipe Mom use to make when I was a child and she told me she learned from her mother. I also substituted brown sugar for while, used Blue Diamond Almond Milk. Second Topping: 1 Red Delicious Apple skinned and sliced, 1/3 cup butter (Light), 1/2 cup brown sugar, 1 teaspoon cinnamon, 1/2 teaspoon vanilla. Combine apple, butter, cinnamon, vanilla, and brown sugar in a fry pan. Medium heat 7 to 10 minutes less if you want stiffer apples although I found 7 minutes worked for me.

Excellent cake (moist and good flavor) and the directions are well written. Instead of using all white sugar for the topping, used half white sugar and half brown sugar.
