FRESH STRAWBERRY PIE 
1 c. sugar
3 tbsp. cornstarch
1 c. water
4 tbsp. strawberry gelatin
2 pts. fresh strawberries
1 (8 inch) baked pie crust (regular or graham crackers)

Mix sugar, cornstarch, and water in saucepan. Cook until thickened, stirring constantly. Remove from heat. Stir in gelatin. Cool. Stir in fresh strawberries. Pour into pie crust and chill for 2 1/2 to 3 hours. Serve as is or with whipped cream.

Probably took 10 minutes before thickened and about 10-20 for it to cool, so relatively fast process and it turned out yummy!

Very, very good! I marinated the berries first in 2 tbsp. of sugar to get the juices flowing! Then, like Karen from Texas, who said it took about 8-10 minutes for the filling to thicken, she was correct, there it was, a beautiful thick yummy sweet filling. It's good with regular jello or diet jello. Pour it into a baked pie shell. Add dollop of whipped cream and summer is singing in your mouth!! Thank you so much for posting this recipe!
