“BLENDER POPOVERS” IS IN:

BLENDER POPOVERS 
1 cup all purpose flour
1/2 tsp. salt
2 large eggs
1 cup milk
1 tbsp. melted butter or vegetable oil

Preheat oven to 400°F.

Popovers are easy to prepare and can be made in advance. They are a great served with creamed chicken or pot pie fillings or stews, sweet popovers go well with gingered apples or other fruit fillings.

Break eggs into a measuring cup and beat with a fork; add to blender or food processor container.

Add remaining ingredients and process for 15 to 20 seconds.

Pour into well greased popover or tall muffin pans.

Bake for 45-50 minutes. Do not open oven until popovers are done!

Cheese Popovers: Add 1 cup grated Cheddar or Monterey Jack cheese; use 3 or 4 large eggs instead of 2. For Parmesan Popovers, use only 1/4 cup and reduce salt in recipe to just a pinch. Parmesan Popovers are wonderful with fresh herbs added to the batter, such as basil and oregano (add herbs after batter is smooth).

Garlic Popovers: Roast garlic in oven or toast in olive oil until lightly golden. Puree garlic in blender until smooth before adding ingredients; process as above.

I have always loved popovers and thought they would be too difficult for limited culinary ability, well this recipe is great! I have now made popovers 5 times since Christmas and will continue to make often. Not only are they so easy to make they are delicious reheated over the next few days. My caution is to NEVER OPEN the OVEN when they are baking and trust the time it says for them to cook. They will puff to at least double in size and will be a toasty brown and hollow in middle. Delicious! Thank you CM!

I love this recipe! It is so easy and cleanup is a breeze because i process a drop of soap with hot water right in the blender after making them. I have tried the parmesean and herb variation its wonderful!@!
