TOMATO - CUCUMBER ONION SALAD 
2 tbsp. vegetable oil
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. vinegar
1 tbsp. sugar
1 tsp. minced parsley
1 med. cucumber, peeled and thinly sliced
2 med. tomatoes, sliced
1 lg. onion, sliced and separated into rings

Combine first 6 ingredients in a jar; shake well. Combine vegetables in a serving bowl. Pour marinade over vegetables; refrigerate 2 hours before serving.

This recipe is very similar to how I make it as well, this is a great way to make it. I do also like to add a tsp. fresh minced garlic, or garlic powder if not available.

Old timers - used to simply put sliced onions & cucumbers - sprinkle a little sugar between layers - then pour diluted vinegar/water - over. Enough to cover. If you want it crunchy - marinate for 30-35 minutes. For more marinade taste.... for an hour.

I've been making your recipe for years! I use dried oregano instead of the minced parsley. And a lot of times I just do the tomatoes and onion minus the cucumbers. It is so good!
