SCALLOPED POTATOES AND HAM
CASSEROLE
 
6-8 medium potatoes
3 tbsp. butter
3 tbsp. all-purpose flour
1 tsp. salt
1/2 tsp. pepper
2 1/2 cups milk
1 small onion, chopped
1 tbsp. butter
1-1 1/2 lb. cubed ham

Wash and peel (optional) potatoes and cut into enough thin slices to measure about 4 cups.

In a saucepan, heat 3 tablespoons butter over low heat until melted. Stir in flour, salt and pepper. Cover and cook over low heat, stirring often, until mixture is smooth and bubbly. Remove from heat; stir in milk.

Heat to boiling again, stirring constantly; boil and stir for about 1 minute.

Arrange potatoes in a greased 2-quart casserole in layers, topping each layer with the desired amount of onion, white sauce and cubed ham. Dot top layer with 1 tablespoon butter.

Cover and bake in 325°F oven for 40 minutes, or in 350°F oven for 30 minutes.

Uncover and bake until potatoes are tender, 60-70 minutes longer. Let stand 5-10 minutes before serving.

I will steam the potatoes before arranging the casserole. Cuts the oven time to about 25 minutes. Everything else the same. Good recipe. Got everything ready for ALFREDO tonight but tomorrow it's scalloped potatoes. Everything I cook comes from COOKS.COM EXCEPT A few Filipino dishes.

This recipe is great! I used regular cooking oil and spam instead of ham.
Background is I am raising three teenagers by myself. We don't have a lot of money, so the local food bank and EBT are primary sources. I can fix a car and build a house, but I am struggling with learning to cook. My teenagers would eat pizza three times a day. If this website had a category for minimizing cost, it would be a big help.
