HAM 'N CHEESE POTATO CASSEROLE 
3 tbsp. butter
1 c. minced onion
3 tbsp. all-purpose flour
1 tsp. salt
Few twists freshly ground black pepper
1 1/2 c. milk
4 med. potatoes, sliced thin
2-3 c. diced, cooked ham
1 c. shredded cheddar cheese

Preheat oven to 350°F. Melt butter in medium saucepan. Add onion and cook, stirring, until tender, about 5 minutes. Stir in flour, salt and pepper until blended. (Be very careful not to scorch.) Gradually stir in milk. Cook, stirring constantly, until mixture boils and thickens.

In 2-quart casserole layer half the potatoes, ham cubes and sauce. Repeat layers and sprinkle with cheese. Bake covered 45 minutes. Uncover and bake 15-20 minutes longer or until potatoes are tender. Makes 4-6 servings.

The meal was great, however there were no instructions on what temperature to bake this at. We ended up baking this at 350°F, which ended up being too low and took longer than instructed. Suggest baking at around 425°F for the time above.

YUM! I only gave it 4 stars because you really need to cook it at 425°F (not 350°F, your potatoes will not cook completely at that temp) and use FRESH onions. I didn't have minced, so I used 1/2 a red onion and it was so delicious.

I made it tonight and I think I would add a tablespoon of mustard next time. It would zest it up just a bit. Otherwise, very good!

The recipe is good, I have made it 4-5 times, the only issue is that like others I found the potato does not cook through at 350°F. I've tried cooking at 350°F in 2 quart baking dish, as well as glass covered 1.5 quart casserole dish, did not cook all the way through at 350°F for 45 minutes, then uncovered for 20-25 minutes. I even tried tossing in the microwave after wards but that did not help once the initial cooking stopped. I will try again as others suggested at a higher temperature.

If you pre-boil the potatoes for 5-7 minutes then it cooks just fine at 350°F.

Made this with leftover baked potatoes cut into cubes and put cornflake crumbs on top. Bake in 30 minutes at 350°F then crunched up the cornflake crumbs under the broiler for a couple of minutes. Even my kids that don't like ham LOVE it!!! Great recipe!!!

Loved this dish. After reading the reviews, I put the potatoes in the microwave and cooked them like I would a baked potato. I took the skins off and cut them in slices, they came out perfect. Other than that I prepared the recipe exactly as stated. This is really a tasty casserole, and I will definitely be making this again. I served this with peas and applesauce...

I've made this great recipe a lot and have several changes I like.

1. I preboil the potato slices about 5 minutes
2. I add additional cheese
3. I add mustard or Hatch Green Chile
