HAM 'N CHEESE POTATO CASSEROLE | |
3 tbsp. butter 1 c. minced onion 3 tbsp. all-purpose flour 1 tsp. salt Few twists freshly ground black pepper 1 1/2 c. milk 4 med. potatoes, sliced thin 2-3 c. diced, cooked ham 1 c. shredded cheddar cheese Preheat oven to 350°F. Melt butter in medium saucepan. Add onion and cook, stirring, until tender, about 5 minutes. Stir in flour, salt and pepper until blended. (Be very careful not to scorch.) Gradually stir in milk. Cook, stirring constantly, until mixture boils and thickens. In 2-quart casserole layer half the potatoes, ham cubes and sauce. Repeat layers and sprinkle with cheese. Bake covered 45 minutes. Uncover and bake 15-20 minutes longer or until potatoes are tender. Makes 4-6 servings. |
