PUMPKIN - OATMEAL COOKIES 
2 c. flour
1 c. butter
1 c. oatmeal
1 c. pumpkin
1 egg, beaten
1 tsp. baking soda
1 tsp. vanilla
1 c. brown sugar
1/2 tsp. salt
1 c. chips or raisins

Combine dry ingredients. Cream butter, sugar, egg and vanilla. Add dry ingredients and mix well. Drop 1/4 cup dough on cookie sheet and bake at 350°F.

These cookies are fabulous. We also added 1 tsp. of pumpkin pie spice since we used fresh cooked pumpkin (thanks mom). We used 3/4 cup raisins AND 3/4 cup mini chocolate chips. They baked for about 12 minutes per batch! YUMMY.

My whole family enjoyed these! Light and fluffy! I doubled the batch, added walnuts, TONS of pumpkin pie spice (and could have added more easily), and added at least anothe cup full of oatmeal (the batter just didn't seem stiff enough). The cookies didn't run, they were beautiful, not chewy or rubbery, light, fluffy and YUMMY! More spices next time...love that pumpkin pie taste!

We really liked the texture of the cookies, but not enough pumpkin taste. Added more pumpkin and pumpkin pie spice. Also added golden raisins and tried it with diced figs. This is a very thick dough, our oven did not cook fast enough with out drying the 1st batch. Increased the heat 375°F. Left the cookie perfect inside and out. This is my huubys new favorite!
