KNUDSON EGGNOG PIE 
1 pkg. (3.5-4oz) vanilla pudding
2 tsp. unflavored gelatin
2 c. Knudson eggnog
1/2 tsp. rum extract or vanilla
1 c. whipping cream
9-inch baked pie shell

Combine pudding, gelatin and eggnog in pan and cook over low heat until thick. Remove from heat and stir in vanilla or rum. Chill.

Whip cream until stiff. Beat eggnog mixture until smooth and fold in whipped cream. Pour into pie shell and chill several hours until set. Garnish with whipped cream, nutmeg or chocolate shavings.

I have made this pie for many years. I discovered the recipe on a carton of eggnog and have loved it ever since. I have made it for November and December birthdays and I have even given it as gifts at Christmas time. I just wish eggnog was easier to find during the year so I could have eggnog pie more often

I made this first at Christmas for a grandson who had seen the recipe on the eggnog carton at home and asked me to make it. It was a huge success for those who loved eggnog. After Christmas I made another pie with my leftover eggnog and froze it. I delivered it to my grandson a couple months later when we had dinner at his house. He was thrilled!
