“ZUCCHINI WALNUT BREAD” IS IN:

ZUCCHINI WALNUT BREAD 
3 whole eggs
2 cups sugar
1 cup vegetable oil
2 cups grated zucchini, peeled
3 tsp. vanilla
3 cups all-purpose flour
1/4 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
3 1/2 tsp. ground cinnamon
1 1/2 cups chopped walnuts

In a large bowl, beat eggs until very light. Add the sugar, vegetable oil, zucchini and vanilla.

Mix together the flour, baking powder, salt, baking soda, and cinnamon. Add to the zucchini mixture.

When the mixture is well combined, add the chopped walnuts, and pour into two 9x5-inch loaf pans that have been well buttered.

Bake in a preheated 350°F oven for about 1 hour or until done.

This is a great recipe just the way it is! However, after baking it a couple of times as is, I decided to add a layer of cream cheese filling in the middle of the bread, and I replaced 1/2 cup of the 3 cups of flour with corn starch, because I wanted to try it with cake flour but did not have any at home at that moment. The people we have been sharing this zucchini bread with tell me that I should be selling it, because it is that good!
