I am going to give this 5 stars, but I think that when adding recipes with rice that the sharer needs to be more specific on the rice. I used brown rice realizing it takes longer to cook, but thought an hour would be sufficient. It needs to be stated in the ingredients specifically what kind of rice. Don't use regular long brown rice. Otherwise it was great. I used a variety of colors of bell pepper for color.
