PUMPKIN OATMEAL COOKIES 
1 1/2 cups all-purpose flour
1 tsp. salt
1/2 tsp. baking soda
1/4 tsp. nutmeg
3/4 tsp. cinnamon
1/2 tsp. ginger
3/4 cup (1 1/2 sticks) butter or shortening
1 cup sugar
1 egg
3/4 cup pumpkin
1 3/4 cups rolled oats
1/2 cup pecans
1/2 cup raisins

Sift together flour, salt, baking soda, and spices. Set aside. Cream shortening and add sugar gradually creaming until light and fluffy. Add egg. Beat well, add pumpkin, oats, flour, nuts and raisins. Mix and drop by teaspoonful onto ungreased baking sheet 1/4-inch apart. Bake at 375°F for 15 minutes.
