SUGAR AND FAT FREE OATMEAL
COOKIES
 
These cookies may be counted as fat-free on some diet plans when 1 serving of 2 cookies is consumed. Technically, these cookies contain a small amount of fat and sugar per serving.

1 cup all-purpose flour
1/2 tsp. baking soda
1/4 tsp. cinnamon
1 cup equivalent sugar substitute (Splenda for baking)
1 1/2 cups quick cooking oats
2 egg whites, slightly beaten
1/3 cup oil
1/2 cup skim milk
1/4 cup molasses
1/2 tsp. vanilla
1 cup raisins

Sift together flour, baking soda, cinnamon and brown sugar substitute. Stir in oats. Combine egg whites, oil, milk, molasses, vanilla and raisins and add to flour mixture. Mix well. Drop batter (1 teaspoon) on lightly oiled cookie sheet.

Bake in a preheated 375°F for 12 to 15 minutes, depending on texture desired. Shorter baking time results in a chewy soft cookie, the longer time in a crisp cookie.

Servings 36.

Nutrition (per serving): 134 calories, 20 calories from fat, 2.3g total fat, less than 1mg cholesterol, 23.7mg sodium, 93.7mg potassium, 27.1g carbohydrates, less than 1g fiber, 19.3g sugar, 1.7g protein.

Very tasty for a no-fat, no-sugar treat. Vanilla quantity was not listed in recipe. I used about 1/2 tsp. I also added about 1/2 c. of chopped pecans. Baking longer does not make the cookies crispier. It just scorches the bottom of them. I spread them slightly with a spatula and baked for about 10 minutes.

Very good cookie. The only change I made was using 1 whole egg instead of 2 whites. I only baked for 12 minutes & they were soft and moist. Will make again.

Molasses is sugar. Skim milk has lactose, which is also a sugar. You cannot ethically call this recipe "Sugar-Free". Because of the molasses, you cannot even call it "No Sugar Added". It has 19.3 grams of sugar. That's enough to cause a problem with diabetics.

If you want it "Sugar-Free", you need to substitute soy milk for the skim milk, and Xylitol Brown Sugar substitute for the molasses. I do it all the time, and it works great.
