ROASTED HERB POTATOES 
This recipe is a great cook along with anything already going into the oven. If the oven is at 425°F, reduce cooking time by 10 minutes. If it is at 350°F, increase cooking time 15 minutes. Great way to conserve energy!

6 medium thin skinned potatoes
1 cup grated Parmesan cheese
2 tsp. garlic powder
2 tsp. dried parsley
6 tbsp. vegetable or olive oil
1/2 cup mozzarella cheese

Preheat oven to 400°F. Put 3 tablespoons vegetable or olive oil in the bottom of a 9x13-inch baking pan. Swirl around to coat the entire pan.

Scrub and slice potatoes in 1/4-inch slices and lay at an angle in the pan so that the skins face up and all stand at an angle, single layered. Sprinkle the remaining oil across the potatoes and then sprinkle with the parsley, garlic, and Parmesan cheese.

Cover with aluminum foil and bake 45 minutes or until fork tender but not mushy. Sprinkle with mozzarella cheese and serve. Enjoy!
