HERBED POTATOES 
3 med. potatoes
1 med. onion
1/4 tsp. dried herb (basil, oregano or tarragon), crushed
1 tbsp. butter
Salt & pepper to taste

Thinly slice potatoes and onion. In 9" pie plate layer half the potatoes and half of the onion. Sprinkle with 1/4 teaspoon dried herb. Drizzle butter. Repeat the potato, onion and herb and butter layers. Season with salt and pepper. Cover and bake in 425 degree oven for 20 minutes. Uncover and bake for 10 to 20 minutes more or until potatoes are tender. Makes 4 side dish servings, 142 calories per serving.
