MOLASSES OATMEAL SPICE MUFFINS | |
2 1/2 cups all-purpose flour 1/2 cup old-fashioned oats 1/2 cup brown sugar, firmly packed 1/2 cup granulated sugar 1/2 tsp. salt 1 tbsp. baking powder 1 tsp. baking soda 1/4 tsp. ground allspice or mace 1/2 tsp. cinnamon 1/4 tsp. ground ginger 1/2 cup buttermilk 1/2 cup whole milk 1/4 cup ricotta cheese 2 eggs 1/2 cup molasses 4 tbsp. vegetable oil or melted butter 1 tbsp. vanilla extract Preheat oven to 375°F. Line muffin pan with paper liners and lightly coat them with baking or oil spray. In a large mixing bowl, stir together flour, oats, sugars, salt, baking powder, baking soda and allspice. In a separate mixing bowl combine all remaining ingredients and mix until smooth. Pour into dry ingredients and mix just until all ingredients are moist. Spoon batter into prepared muffin cups, filling to the rims. Bake at 375°F for about 20 minutes. Muffins should be light golden brown and a wooden pick inserted into center of a muffin (one of the center muffins in the pan) should come out clean. Cool muffins in pan for 10 minutes before removing to cool completely. Submitted by: Belle |
