BRIGHT EYED SUSANS 
3/4 c. butter
1/2 c. sugar
1 egg
1 tsp. vanilla
1/4 tsp. salt
1 3/4 c. flour
1 (7 oz.) pkg. solid chocolate, mint candy wafers or chocolate non parallels

Cream butter, sugar, egg, vanilla and salt. Stir in flour. Chill 1 hour. Using about 2 teaspoons of dough shape into 1 inch balls.

Place 2 inches apart on ungreased cookie sheet. Flatten each by pressing wafer in the center. Bake 400 degrees for 8 to 10 minutes. Remove immediately to rack. Yield: 4 dozen.

400°F, that seems to high of a temperature for cookies. I think I will try 350°F and let you know if it worked out. I usually press them after 5-6 minutes in the oven and then let them cook for another 8 minutes or so. Once the cookies are cooled, I add the jam in the centre.
