HOMESTYLE BUTTERNUT SQUASH SOUP 
5 tablespoons chopped white onions
1/2 clove garlic, ground
2 1/4 cup cubed butternut squash
3 tablespoons butter
1/4 cup vegetable stock
3/4 cup chicken broth
3 cups water
1/8 teaspoon ground thyme or basil
1 bay leaf
1/8 teaspoon ground cayenne pepper
1/4 teaspoon ground black pepper
a pinch of ginger
1/3 cup light cream
2 potatoes, cubed

Sauté onions and garlic with butter. Add squash, potatoes, vegetable stock, chicken broth, and water, and bay leaf. Stir in peppers and thyme or basil. Add a pinch of ginger, and bring to a boil for about 18-20 minutes.

In blender, puree the soup with light cream and any additional ingredients you would like to add.

It is an interesting soup with a nice blend of flavors. It may need more salt or sugar. The spices, especially the ginr, is apparent and subtle - but the recipe needs something to "activate" the flavors somehow. Overall - a very clever recipe for using Fall squash and potatoes!

Family pleasantly pleased since they don't like butternut squash much. I sauted a red pepper with the onions and added salt and some bacon crumbles on top. I boiled off too much liquid, even when covered almost burned everything so I had to add water back in. Family suggested cumin or corriander might be a good addition.

I made this today. I had an open container of beef broth so I used that and I skipped the peppers. It was bland so I added blue cheese and ricotta cheese to the top of each bowl along with some crumbled up bacon. Yum, just what it needed. The soup is a good base but needs stuff added to it.
