FROG EYE SALAD 
1 c. sugar
2 tbsp. flour
1/2 tsp. salt
1 3/4 c. pineapple juice
2 eggs, beaten
1 tbsp. lemon juice
3 qt. water
2 tsp. salt
1 tbsp. cooking oil
1 pkg. (16 oz.) Acini de Pepe
3 cans (11 oz. each) mandarin oranges, drained
2 cans (20 oz. each) pineapple chunks, drained
1 can (20 oz.) crushed pineapple, drained
1 c. miniature marshmallows
1 c. coconut (optional)

1. Combine sugar, flour and 1/2 teaspoon salt.

2. Gradually stir in pineapple juice and eggs.

3. Cook over moderate heat, stirring until thickened.

4. Add lemon juice; cool mixture to room temperature.

5. Bring water, 2 teaspoons salt and oil to boil. Add Acini de Pepe

6. Cook at rolling boil until done (5-8 minutes).

7. Drain, rinse, drain again and cool to room temperature.

8. Combine egg mixture and Acini de Pepe; mix lightly.

9. Refrigerate overnight in airtight container.

10. Add remaining ingredients; mix lightly but thoroughly.

11. Refrigerate until chilled in airtight container. May be refrigerated for as long as a week.

Acini Di Pepe is a noodle. It is in the shape of a very small ball (the No. is the size of ball). I believe this is where the name must come from because they look like little eyes, haha. I have found Acini Di Pepes at stores like Safeway and King Sooper.

I love this salad and it's very unique....you can have a whole bunch of fun with kids with this one. The Acini de Pepe really looks like frog eyes. But when they taste the sweet texture filled salad they always ask for more!

This is such an amazing dish, and has always been a great addition to all of the holiday meals our family has. This year I was tasked for the first time to make it, previous years my mother had always done so.

Super easy to make, sounded at first a little complicated (not much of a cook myself) but had no issues with making it. The only issue I had was finding the Acini de Pepe... not sold at wal-mart apparently after I had been to three of them, couldn't find it at the albertsons I went to, finally ended up at a Smith's across town and bought every bag on the shelf so i wouldn't have to worry again :)

I have made frog eye (dessert) salad for years but I use the instant pudding instead of cooking it. Also I use pistachio pudding instead and tell all the kids (and some adults) that it took alot of frogs to get all those eyes. HA! HA!

This is a real treat every time I make it for some holiday, personally I like it with just the custard, and it can be a whole meal to some people. The kids enjoy it anytime. It feeds a lot of people... a real winner at work for potlucks

I accidentally omitted the marshmallows. Oopsies, other than that I made it just as the recipe says. It made enough for an army. It is so delicious, do I dare say addictive? Will make more soon. Oh so yummy!

You can also use the mini star pasta. Wal-mart does sell that. I like to put my pineapple in the blender. It make a smoother texture.
