STEVE'S ONION CASSEROLE 
3 to 4 onions
2 tbsp. butter
1 (15 oz.) can beef broth (Swanson)
1/4 cup sherry
freshly ground pepper
2 tbsp. cornstarch
plain croutons
2 cups Swiss cheese (or 1 package sliced)

Slice then cut onions in half. Sauté onions in butter until soft. Add one can of beef broth. Add sherry and pepper. Simmer till hot. Add 2 tablespoons cornstarch (blended with broth or water. Whisk together). Pour into casserole dish.

You can continue with cooking or place in refrigerator overnight.

To continue: Bake covered at 375°F for 30 minutes. Uncover and add 1/2 cup (or more) of croutons. Bake 10 minutes longer. Sprinkle Swiss cheese over top of casserole. Bake uncovered 10 minutes longer.
