BACON, EGG, POTATO CASSEROLE
This is a recipe I have been cooking for years, and is an all time family favourite! This is so easy, the ingredients will just depend on what dish you use.

6 large potatoes
6 boiled eggs
300gm diced bacon or about 5 rashers bacon
3 tbsp butter or marg
7 tbsp flour (any sort)
breadcrumbs, for sprinkling (optional)
2 cups milk

Basically all we do is: Peel the potatoes and boil until all but done; cool and slice.

Boil the eggs, cool and slice. Fry the diced bacon or bacon pieces.

In a casserole dish, layer the sliced potatoes, sliced boiled eggs, and then the bacon.

When finished, prepare a white sauce and pour over dish, then sprinkle some breadcrumbs on the top, if desired. Cook in oven for about 30mins at about 375-400°F (200C).

I don't have any doubt that your family or guests will not rave about this, so simple, things we cook everyday, but together it is a winner!

Can this be prepared the night before and cooked the next morning?

My mother used to make this when I was a child back in Ireland (35 years ago now). I seem to remember it had onions in it, and she made it with leftover back bacon instead of rashers. I was a pretty picky eater, but I used to devour this one.

We had this for breakfast this morning. It was very good. I did add a layer of onions on top of the potatoes, and then the next ingredients. After the bacon I added a layer of cheddar cheese as well as make the white sauce into a cheese sauce. The grand kids loved it as well as all of us.
