SWEET POTATO CASSEROLE 
2 large cans sweet potatoes, drained
1 1/2 cups sugar
2 eggs
1 1/2 teaspoons vanilla
1/2 cup milk
1/2 cup butter, melted

TOPPING:

3/4 cup oats
3 tablespoons flour
3/4 cup packed brown sugar
1 1/2 teaspoons cinnamon
1/3 cup butter, melted
1 cup crushed pecans
3/4 cup shredded coconut
mini marshmallows

Mix the first 6 ingredients with a mixer. Prep baking dish with cooking spray, then pour in. Mix the topping ingredients by hand. Sprinkle on top.

Bake uncovered at 350°F for 25 minutes. Sprinkle marshmallows on top, then bake uncovered 5 more minutes.

Just made this tonight. FANTASTIC. I did not include the pecans (my fiance is allergic to nuts) and I hate coconut so I didn't include that either. It was still amazingly good. My fiance said I'm going to have to cook more often because of how great it was.

I LOVE this recipe, but I made a few changes. I left out the white sugar (sweet potatoes are already sweet!), but did use the brown sugar for the topping. I also added cinnamon to the potato mixture and the topping.

This was my first time making sweet potatoes of any kind, and it was absolutely FANTASTIC. Because I don't like coconut, I eliminated it, BUT I did put a little twist on it and added two sliced Fuji Apples. Thank you for sharing this recipe Kimberly.

I added hunks of bosch pears to the mix, and it was to DIE for!!!! Have used apples before also, but I cooked the apples for about 10 min. Before mixing in with the potato mix. Delish!

I came across this recipe about 3 years ago & chose it from all others because it seemed so simple. I get so many compliments on this casserole & lots of people ask me for the recipe. My boys that say they do not like sweet potatoes, LOVED them and have requested me to make them for the last two years. They are a big hit on both sides of my family & I have people that don't normally eat sweet potatoes asking for 2nds & the recipe. Yum GOOD stuff!!!
