WESTERN CHICKEN 
2 whole bone in chicken breasts split in half, skin removed
2 tsp. lemon juice
1/4 tsp. instant minced onion
1/2 tsp. dried basil leaves
1/8 tsp. pepper
2/3 c. shredded Cheddar cheese
1/2 sm. avocado, peeled & thinly sliced
4 thin slices tomato

1. Arrange chicken breasts, bone-side down, in 9 inch square baking dish. Sprinkle with lemon juice, onion, basil and pepper. Cover dish with wax paper. Microwave for 7 1/2-9 minutes or until meat near bone is no longer pink.

2. Sprinkle chicken with half the Cheddar cheese. Top with avocado and tomato slices. Sprinkle with remaining cheese. Microwave for 1-2 minutes or until cheese melts, rotating dish after half the time. Cover loosely with aluminum foil. Let stand 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
