CHICKEN SALAD WITH GRAPES 
1 lb. chicken, cooked, chilled, and cubed
2 c. seedless grapes
2 scallions, thinly sliced
1/2 c. chopped walnuts
1/4 c. mayonnaise
1/4 c. plain yogurt
1 tsp. curry powder
Arugula leaves
Fruit chutney
1 tbsp. lemon juice

Using 2 whole boneless chicken breasts. Place chicken on 9 inch pie plate, thicker side out; sprinkle with lemon juice. Cover with waxed paper. Microwave on high for 3 minutes. Turn over and microwave on high for 2 to 4 minutes. Combine all ingredients except arugula and chutney. Line dish with arugula. Serve chutney on side.

Since microwave ovens vary in power, you may need to adjust your cooking time.
