“ALFREDO SAUCE” IS IN:

ALFREDO SAUCE 
1/2 cup cream cheese
1 cup milk (0-2%)
3 tbsp. freshly grated Parmesan cheese
1 clove garlic
1/2 tsp. salt
1/2 tsp. pepper (more or less, to taste)
3 tbsp. dry parsley or 1/2 cup fresh

The best way to make this consistent is to use a blender. Put cream cheese, milk, Parmesan cheese, garlic, salt and pepper in blender. Blend until there are no clumps, pour into saucepan on medium heat, cook for about 10 minutes. While cooking add parsley (if fresh chop finely) and save some for garnish.

Cook your favorite pasta - I recommend spaghetti. If you want you may add chicken, bacon or any of your favorite meats. I find it goes great with clams.

Pour desired amount over pasta. Cook selected meat in sauce to absorb flavor; If seafood, use a different pan and then add over pasta before pouring Alfredo Sauce.

If you find the original sauce using cream and butter to be too heavy, then this modified, lighter version may be a healthier choice for you.

Hi Vickey,

Since it has dairy (cream cheese) I wouldn't recommend it. It's best to stick with recipes that are designed specifically for canning.

Just made this but added a little margarine, onion and extra garlic. Added fresh crab meat. Hubby loved it and he is not a fan of seafood. Sorry Sarah, you need to kind of make it your own.

This recipe was excellent! I made it this evening for my hubby and we really enjoyed it. I used large flat noodles that I bought at Trader Joe's. I just added two cloves of garlic, fresh parsley and "Locatelli" Italian grated cheese. Thank you for an excellent recipe. It was so easy to make and not as rich as the recipe that calls for egg and heavy cream. Thank you!

Delicious recipe! I put this together at the last minute for a quick lunch with some chopped chicken and cheese tortellini. I used skimmed milk and Philadelphia 1/3 Less Fat Neufchatel Cheese. I didn't have fresh Parmesan, so I used a hard sharp provolone. I put everything in the Magic Bullet, blended it for about 5 seconds and cooked in the microwave. I plan to use this recipe later in the week as a sauce on a homemade pizza. Thanks for the recipe...it's a keeper!

Michele (in Michigan)'s comment has little merit. Not all of us like the traditional taste of food. Take pizza... traditional Italian Pizza is "Sauce on Bread"... deluxe has some cheese! Thank Goodness the greeks have shown us how to Americanize it! I love these easy tasty recipes!

Please disregard Michele in Michigan's comment, she obviously did not try this recipe, basing her comment only on speculation. For those of you looking for a foolproof, inexpensive and easy way to make Alfredo - this is the recipe you want! Finally, a recipe without a million different items (or having to run out to the grocery store for that one item no other recipe calls for) but still tastes like it has all those ingredients. This is perfect for career women who still have to balance a home life. Thanks so much, Jeff!!!!!

Michele, did you not read the ingredients? Last time I checked, Parmesan cheese was cheese. "real" alfredo, as you put it is Parmesan and cream. These substitutions for a lighter version are valid. That's what cooking is all about, making food you like. Not following rules. I made this tonight, and as an Italian American I give it thumbs up. So put that in your pot and cook it. Al dente. about 10 minutes.
