RECIPE COLLECTION
“ALFREDO SAUCE” IS IN:

ALFREDO SAUCE
1/2 cup cream cheese
1 cup milk (0-2%)
3 tbsp. freshly grated Parmesan cheese
1 clove garlic
1/2 tsp. salt
1/2 tsp. pepper (more or less, to taste)
3 tbsp. dry parsley or 1/2 cup fresh

The best way to make this consistent is to use a blender. Put cream cheese, milk, Parmesan cheese, garlic, salt and pepper in blender. Blend until there are no clumps, pour into saucepan on medium heat, cook for about 10 minutes. While cooking add parsley (if fresh chop finely) and save some for garnish.

Cook your favorite pasta - I recommend spaghetti. If you want you may add chicken, bacon or any of your favorite meats. I find it goes great with clams.

Pour desired amount over pasta. Cook selected meat in sauce to absorb flavor; If seafood, use a different pan and then add over pasta before pouring Alfredo Sauce.

If you find the original sauce using cream and butter to be too heavy, then this modified, lighter version may be a healthier choice for you.

ENJOY!

Makes 3 or 4 servings.

I had company the other night, needed a quick and simple recipe, this was it!! I love it so much I'm adding it to my regular recipe collection. Tonight I plan to use it on Flat Bread with Chicken, artichoke hearts, and spinich for pizza night. This is a perfect recipe. I don't get where Michele thought the ingredients weren't fresh, I used all fresh ingredients, it was perfect!! Thanks for the recipe.

I was looking for a recipe for Alfredo Sauce and found this one and loved it. I served it with beef tips that were braised in beef broth and then put in oven to cook longer, Wild Mushroom Agnatoli and asparagus. This was a surprise Valentine dinner for my husband and me. Wow! It was better than having spagetti.

It was good. Didn't have as much flavor as I would have liked, but it was very fast and easy. Due to the summer heat, I ended up heating mine up in the microwave, an extra clove of garlic, added a tablespoon of butter, and omitted the parsley.

Delicious!!! I had leftover chicken breast and rigatoni. I sauteed some zucchini, yellow squash, onion, garlic and sundried tomatoes in a tablespoon of olive oil, added the chicken and rigatoni then poured the sauce and let simmer. I also whisked about a tablespoon of flour in some milk and added it to thicken it a bit. Will definitely make again, nice and creamy.

Wonderful recipe! I did add butter to mine as well but it's great. I was very hesitant about the cream cheese too but no questions asked, this makes the quickest, easiest, tastiest alfredo sauce ever!

This recipe was great! Served it over tortellini and chicken. Next time I make it I will omit salt and pepper add it to taste. It was very salty/peppery, but still a keeper!
