Hi Katherine. I'm also in SC (Rock Hill). Love this casserole. Reminds me of my mom. She used to make it every holiday. Enjoy and Happy Holidays!!

My best friend use to make this for me. I always thought it was something she just made up, she would never tell me how to make it. She died four years ago and now I can have it again. Miss you Pam.

MUST drain crushed pineapple!!! Take paper towels and press on top of pineapple (after you spread in the dish) until all liquid is gone!!! (I then add the rest of my ingredients to mixture (not cheese and not butter and crackers). Now, add cheese and spread evenly over pineapple/sugar/flour mixture. Next, I melt my butter in the microwave and pour in a Ziploc with a sleeve of Ritz crackers and seal. Then, I take a meat mallet and break up crackers/butter. Shake bag, and then pour butter and cracker mixture on top of pineapple mixture. It is AMAZING!
