WILTED CUCUMBERS | |
4 med. cucumbers, peeled 1 tsp. salt 1 c. cider vinegar 1/4 c. water 3 tbsp. sugar, or to taste 1/2 tsp. pepper Slice cucumbers thin and sprinkle with salt. Let stand at room temperature 1 hour. Drain well. Mix vinegar, water, sugar, and pepper. Pour over cucumbers; cover and chill at least 1 hour. Makes about 1 quart. Cover and refrigerate leftover. Will keep 4-5 days. |

Score the cucumbers with a fork before slicing them as thinly as possible.
Add thinly sliced onions to the cucumbers separated into rings.
Use a plate weighted down on top of the salted cucumbers & onions to help accelerate their wilting before pouring off the brine that forms.
Add a dash of garlic powder and dill weed to taste to the vinegar. You can omit the water by leaving a little of the brine if it is not too salty.
Only use a smidgen of sugar - just enought to take the 'bite' out of the vinegar. And only add it after the flavor has had a chance to develop lest it taste sweet.
