BANANA PUDDING (LARGE BATCH) | |
I make this for family gatherings because it serves around 20 people. 4 bags vanilla wafers 3 to 4 lb. bananas PUDDING: 1 cup all-purpose flour 2 cups sugar 1 tsp. salt 1/2 gallon scalded milk 8 eggs, separated 2 tsp. vanilla Mix flour, sugar and salt in heavy non stick pan. Slowly stir in hot milk and cook until desired thickness, stirring constantly. Stir a little of the mixture into the beaten egg yolks. Pour back into pan and cook about 2 more minutes. Remove from heat, add vanilla and cool until just warm. Alternate layers of wafers, bananas and pudding in large dish. Chill before serving. My family does not like the Calf Slobber on top but if you do: Beat the egg whites on high speed until foamy add 1 cup of sugar and beat until stiff peaks form. Spread over top of pudding and bake at 350°F for about 15 minutes. Submitted by: Melody Cox |
