OLD FASHION RICE PUDDING 
1 c. leftover rice
1 c. sugar
1/2 tsp. salt
1/4 tsp. nutmeg
1 1/2 c. milk
1 egg, beaten
1 tbsp. butter
1/2 tsp. vanilla flavoring
1/2 tsp. cinnamon

Combine egg, milk, rice, sugar, butter, salt, flavoring and nutmeg into 1-quart baking dish.

Bake in 350°F oven for 1 hour, stirring after 15 minutes and again when pudding is done. Then sprinkle with cinnamon and sugar. Place in broiler a few minutes to brown. Serve warm or chilled.

Makes 6 servings.

This recipe was OK after we carefully added 4 eggs for thickening after the hour of cooking. Then cooking another hour. We also added raisins. Turned out good.

I used about two cups of rice and this recipe was still very wet. I think "Old Fashioned" refers to a non-custard type of dish. I think for getting rid of leftovers this was a simple and tasty dessert. I would actually cut back on the sugar to two-thirds cup or even half a cup as this recipe was very sweet.

I scaled up the recipe for two batches instead of one (2 cups of rice, 2 eggs, etc) except for the milk (I kept it at 1.5 cups for the two batches). In addition, I added a tablespoon of cornstarch. I baked it for the one hour, and it turned out pretty well. I didn't need to brown it in the broiler because it was starting to turn brown after the one hour of cooking. The consistency after baking was thick, just as I had hoped.

I used brown rice and 1/2 C. of Splenda instead of sugar since I am diabetic. I agree that it is easy, delicious, and a great way to use up left over rice. It is overly sweet, though. I would cut back on the sugar next time!!

This is quite yummy--we cut down on the amount of sugar and added dried tart cherries. The tartness is a great complement to the sweetness of the rice.

I thought this was an ok recipe. I also added coconut along with the rice while cooking. I finished with toasted coconut sprinkled on top. I would cut back to 1/2 cup of sugar. Over all it was a good way to get rid of your left over rice.
