NEIL'S LINGUINE WITH MARSALA
CLAM SAUCE
 
2 cloves garlic, minced
2 tbsp. olive oil
1 (16 oz.) pkg. fresh sliced mushrooms
2 (6 oz. ea.) cans minced clams
4 (8 oz. ea.) bottles clam juice
1 cup Marsala wine
1 tsp. Mrs Dash
2 dashes Old Bay seasoning
1 tbsp. cornstarch (optional)
1 (16 oz.) box linguine pasta (Barilla)

Sauté garlic in olive oil until golden. Add mushrooms, Mrs. Dash, cover and cook on medium heat till mushrooms are tender. Add Marsala wine (reserve 2 tablespoons of wine) and reduce to half. Add clam juice, Old Bay seasoning and reduce by half over medium heat.

Note: The sauce may be thickened by adding 1 tablespoon of cornstarch.

When ready to serve: add minced clams and reserved wine.

Cook linguine as directed on package and serve.
